Bestest Broccoli Salad
Welcome back to the All Things Southern kitchen. I thought I’d share my Bestest Broccoli Salad with y’all. It’s so good and a perfect side dish to round off a light summer supper, say some grilled seafood and a loaf of French bread. Let’s stir it up.
- 2 cups fresh broccoli
- 1 cup golden raisins
- 1 cup chopped green onions
- 6 slices bacon, fried and crumbled
- Dressing: 1 cup mayonnaise with ¼ cup sugar and 2 tablespoons lemon juice
We’ll begin by chopping up this head of fresh broccoli into little florets. I’ve already fried and drained six slices of bacon. We’re gonna crumble it into our broccoli along with a cup of golden raisins and a cup of chopped green onions.
As a final step, we’ll make the dressing separately in order to be able to mix up our salad right before we sit down. The dressing is simple. We’ll take a cup of mayonnaise, (Not Miracle Whip! No cussing in my kitchen!)and stirring it together with a fourth cup of sugar and two tablespoons lemon juice. That’s it. Good eating doesn’t have to be complicated.
