Caramel and Oats Skillet Cookie
Say skillet cookies and I’m in, but add Caramel Chips and Oats and I’m all in. Okay, so you could also call it a pie. Either way, put the coffee on and call the family. The apples, the spice, the caramel? It tastes like Fall on a plate! Let me walk you through it.
“Caramel and Oats Skillet Cookies”
1 cup unsalted butter, softened
1 and ½ cup light brown sugar
1 and ½ teaspoon vanilla extract
1 large egg
3 tablespoons corn syrup
1 and ¾ cup self-rising flour
2 teaspoons apple pie spice
½ teaspoon salt
1 and ¼ cups of quick cooking oats
1 cup caramel chips
1 medium green apple, chopped
(You can add a couple tablespoons of sugar, but I think there’s plenty sweet here)
Caramel sauce for topping – I used the refrigerator kind. Yeah. Life’s short, take some shortcuts already. 😊
I’m going to begin by preheating my oven to 325. I’ll grab my medium sized cast iron skillet and spray it with non-stick cooking spray. I’m going to add the butter, brown sugar, and vanilla in my mixer and beat it a couple of minutes, until it’s good and fluffy. Then I’ll add the egg, mix some more, and finally the corn syrup.
In a separate bowl, I’ll whisk together the flour, apple pie spice, and salt and then I’ll gradually spoon it back into the mixer with the fluffy butter, a little at a time. Once it’s combined, we’ll add one cup pf quick cooking oats, a cup of caramel chips, and about three fourths of our chopped apples. We’ll transfer this to our prepared skillet and sprinkle it with the rest of the oats and apples. That big finish is important, don’t skip it. You want some of that crunch on top!
Bake about 45 minutes or until you can test it with a toothpick, and have it come out clean. Watch it carefully. If you notice it’s browning too fast on the edges, cover them with foil. That’s it. Top with caramel sauce and maybe a dollop of ice cream and remind people like the beloved farmer not to hurt themselves.
