Chillin’ Strawberry Cheesecake
Welcome back to the All Things Southern kitchen, folks. We’re making a couple of my awesome no bake Chllin’ Strawberry Cheesecakes! Chillin’ Cheesecake? I named ‘em that ‘cause it doesn’t require a big time commitment. Follow me over to the island and let’s get cooking!
- 1 (3 ounce) box Lemon Jell-O
- 1 cup boiling water
- 2 (8 ounce) packages of softened low fat cream cheese
- 1 cup sugar
- 1 (3 ounce) package of strawberry Jell-O
- 2 tablespoons cornstarch
- 1 and 1/3 cup water
- 1 pint of washed and sliced strawberries
- 2 graham cracker crusts
We’ll prepare the bottom layers first by taking a small 3oz box of lemon Jell-O and dissolving it completely in a cup of boiling water. Then, I’ll take my electric mixer and beat in our 16 ounces of soft cream cheese. Once the base is smooth I’m going to pour it into two prepared graham pie crusts, dividing it evenly. Now, we’ll set our bottom layers in the refrigerator while we make our simple syrup pie filling. We’ll take a small boiler and combine a cup of sugar with two tablespoons of cornstarch. Then we’ll stir in one and a 1/3 cup of water, bring it to a boil, and turn it down to medium. After it cooks about a minute or so we’ll remove it from the heat, add three ounces of strawberry Jello, stir well, and set it aside to cool. We’ll spread our sliced berries across the top of our pies. Then, once our pie filling cools we’ll pour it across the berries.
That’s it! Chill ‘em for a couple of hours or until they’re nice and firm. Top with whipped cream if you’d like. ( I love!) That’s good eating from the All Things Southern kitchen to yours!
