Cookie Monster’s Favorite Cookies
Welcome back to the All Things Southern kitchen friends. I must tell y’all what I’ve done. I’ve perfected the most awesome cookie! Here’s the thing. I like my cookies to stay soft and I can’t ever find the recipe that delivers just the right texture I’m after—until now. I took a bit of this recipe and a bit of that and well, I’m just saying, I may need a medal. And a parade… And a band…Okay, enough of that. I’ll show y’all the ropes.
Cookie Monster’s Favorite Cookies
½ cup butter
1/3 cup brown sugar
1 egg
1/3 cup sugar
1 tsp. vanilla
1 and ¼ cup plain flour
1 tsp. baking powder
¼ tsp. baking soda
¼ tsp. salt
1 cup dark chocolate chips
½ cup shredded coconut
1 cup pecans, crushed
You’ll want to take 1/2 cup butter and cream it with 1/3 cup brown sugar and a 1/3 cup white sugar. Add one egg and a teaspoon of vanilla and beat just until blended. In a separate bowl we’ll mix 1 and ¼ cup plain flour with 1/ tsp. baking powder, and a ¼ teaspoon each of baking soda and salt. Now, we’ll take our dry ingredients here and blend ‘em a bit at a time into the wet ones. Then we’ll finish by stirring in the chocolate chips, shredded coconut and chopped pecans. I made mine huge. I mean, I used an ice cream scoop so they’re the size of bakery cookies and one will do ‘ya. We’ll bake these for 12 minutes in a 325 degree oven and enjoy!
