Dee Barnett’s Famous Pretzel Salad
Welcome back to the All Things Southern Kitchen friends. I’ve got a wonderfully unique recipe for y’all today. It comes to us by way of my writer friend, Karen Spears Zacharias (author of Will Jesus Buy Me a Double Wide Cause I Need More Room for My Plasma TV) who was served it by a lady named Dee Barnett. I’ve since tried it and can vouch for it. This is good eating. Let me show you the ropes.
- 8 oz. cream cheese
- 1/2 c. sugar
- 20 oz. crushed pineapple, drain well
- 8 oz. cool whip
- 1 c. crushed pretzels
- 1/4 c. sugar
- 1 stick melted butter
I’m going to mix a half cup of sugar into an eight ounce package of cream cheese. Then we’ll drain a 20 ounce can of crushed pineapple, really well, and fold it in along with an eight ounce container of Cool Whip. In a separate, microwave safe mixing bowl we’ll combine our crushed pretzels, and a stick of melted butter with another ¼ cup sugar. We’ll microwave this on high for about a minute. It gets very hot, so be careful. If it’s a while before you eat, just chill the cream cheese mixture in the refrigerator. When it’s time to serve, just mix the pretzels in and enjoy yourselves a Pretzel Salad folks. It’s good eating, southern style!
