Fool ‘Ya Fudge

Hey folks! Welcome back to the All Things Southern kitchen. By now you’ve probably heard of Keto even if you aren’t trying to go Keto, am I right? Well, versions of today’s fudge recipe can be found on a number of Keto sites, so I can’t claim it as my own. The only difference—I like to add a sprinkle of sea salt because we like salted chocolate! My man is willing to vouch for this almost sweet treat—it’s the perfect little after dinner bite of deliciousness. It doesn’t taste like a low carb, low sugar fudge at all! Now, I can show you how to whip it up, but you’re on your own with quantity control, and yes, sadly, that’s where we get in trouble.

Fool ‘Ya Fudge

1 stick unsalted butter, melted
2 ounces unsweetened chocolate
1 tablespoon vanilla extract paste
1 8-ounce package softened cream cheese
¼ teaspoon salt
1 cup crushed pecans
*we don’t need extra sweetener but your family might!

We’ll begin by taking a small sauce pan and melting a stick of unsalted butter and 2 ounces of unsweetened chocolate. We’ll add a tablespoon of vanilla extract. (I like to use vanilla paste. Just FYI.)

Next, we’ll take our blender and blend in eight ounces of softened cream cheese, a ¼ teaspoon of salt and a cup of crushed pecans. We don’t need extra sweetener, but your family might. Try a taste test once it’s blended and before you spread it in an 8×8 greased casserole dish.  You may find you want to add a bit of stevia or other sugar substitute if you need it really sweet.

You’ll want to put this in the freezer to firm it up, and then, if you like fudge as much as I do, you may want to leave it in the freezer so it’s not calling to you 24/7. Just an idea!
