Lemon Ice Cream Pie
It’s official. We have reached that point of the summer where the temps are murderously hot, defined as that time when asking that question,”Hot enough for ‘ya?” is enough to put your life in danger. So, I’m thinking we need something cool and refreshing and I have just the thing—Lemon Ice Cream Pie! If you’ve ever finished an ice cream pushup a long time before you had enough of that sweet orange cream you’re going to love me for this one. It tastes just like the pushup, but here’s the good part— it’s in a big old pie. Let’s do it.
- 2 (8 inch) graham cracker crusts
- 1 half gallon vanilla ice cream
- 1 (6 ounce) can frozen lemonade
- Graham cracker crumbs
This is incredibly easy. I’ve already softened a half gallon of vanilla ice cream and one six ounce can of frozen lemonade. We’re going to beat these together until they’re creamy, and then we’ll divide it between two graham cracker crusts and freeze it overnight. The next day, when you’re ready to make your Lemon Ice Cream pies, just sprinkle graham cracker crumbs over the top and offer a nice big slice to each of your loved ones with my blessings. Simple and satisfying. Enjoy!
