Maw Maw Lucy’s Fudge Nut Muffins
Hey folks, welcome back to the All Things Southern kitchen! I don’t know what y’all did on election night, but I felt the need to make something warm and chocolaty. So, I pulled out Maw Maw Lucy’s recipes, poked around a little, and found her Fudge Nut Muffins. Oh, yeah! I hadn’t had them in a while but they were everything I remembered and more. I’ll show you how to whip up a batch for your sweeties.
“Maw Maw Lucy’s Fudge Nut Muffins”
1 and ½ cups dark chocolate chips
2 sticks butter
3 cups chopped pecans
¾ cups sugar
1 cup unsifted flour
4 large eggs
1 teaspoon vanilla
We’ll begin by melting a cup and a half of dark chocolate chips with two sticks of butter in a double boiler over medium heat. Meanwhile, in a large glass mixing bowl we’ll combine ¾ cup of sugar with a cup of unsifted flour. We’ll stir in four large eggs and one teaspoon of vanilla and stir lightly. Heads-up, now, this is very important. Don’t use an electric mixer unless you want packed dry muffins! You want to stir it just until the ingredients are mixed. Then we’ll add in our melted chocolate and butter along with 3 cups of chopped pecans, and again, still lightly.
Spoon into paper muffin containers and bake at 325 degrees for 30-35 minutes. It makes approximately 24 of Maw Maw Lucy’s Fudge Nut Muffins! That’s good, sweet eating from my kitchen to yours!
