Perfect Pea Topping Relish
Welcome back to the kitchen. I’m excited about sharing this recipe with y’all. It’s a simply scrumptious relish to top those fresh peas you’ve been hankering for, or it can be served as a delicious low-calorie dip. Pair it with some baked chips and congratulate yourself to skipping the Rotel and cheese dip— at least today. But, remember, don’t deny yourselves forever, honey; you’ll just fall off the wagon in the end. Now, let’s get cooking…
“Perfect Pea-Topping Relish”
1 (4 ounce) can chopped green chilies
1 (2.25 ounce) can chopped ripe olives
1 can of Rotel tomatoes
1 bunch chopped green onions
2 tablespoons extra virgin olive oil
1 teaspoon vinegar
1 teaspoon garlic powder
1 teaspoon Cajun seasoning
Salt and Pepper to taste
We’ll stir together a can of chopped green chilies, a can of chopped ripe olives, and a can of Rotel Tomatoes with a bunch of chopped green onions. Then we’ll add two tablespoons of extra virgin olive oil and a teaspoon each of vinegar, garlic powder, and Cajun seasoning. Salt and pepper it to taste and chill it in the fridge while the peas are cooking. Enjoy my Perfect Pea-Topping Relish, folks! It’s good eating, southern style.
