Shellie’s Highly Favored Chocolate Lemon Bark Candy

Welcome back to the All Things Southern kitchen, friends! It’s beginning to look a lot like Christmas — only, once again, I haven’t been able to find my favorite candy in the specialty stores. That would be Chocolate Lemon Bark—I love the stuff! Could eat a pound of it! I haven’t been able to find it the last few years and I’ve been looking everywhere. So, I’ve created my own recipe and I’m sharing it with the rest of y’all.  But that’s not all—today’s recipe comes with a bonus. I’ve decided to begin making official proclamations. Proclamations? Yes, sir. Proclamations! I figure I should use this title of mine for good. Therefore, as the Belle of All Things Southern I now proclaim that chocolate is the new tofu.  You’re welcome! And now, the recipe.

“Chocolate Lemon Bark”

1 pound white chocolate bark
14 ounces old-fashioned lemon drops, crushed
2 teaspoons lemon extract

 

There are only three ingredients here, which means it was super easy, and seeing as I have finally perfected the chocolate to lemon extract ratio, I’m going to make a few more lemoncandybatches to give as gifts. (Folks, if you try to use anything less than two teaspoons of lemon extract you’re going to have white chocolate with lemon candy– not Chocolate Lemon Bark!)

First step, we’ll take a hammer to a bag filled with fourteen ounces of lemon drops and crush them into small pieces.

Next, we’ll melt a pound of white chocolate bark in a double boiler on the stove. Once it’s melted, we’ll stir in two full teaspoons of lemon extract, spread it on wax paper and sprinkle with the crushed lemon candy. Then we’ll slide the whole thing in the refrigerator until it sets. That’s it!

Break it up in pretty bite-size pieces and enjoy.  That’s my Chocolate Lemon Bark and it’s good eating from the All Things Southern kitchen to yours!
