Shellie’s Sweep the Kitchen Veggie Roast
Welcome back to the All Things Southern kitchen friends! The other night I was trying to decide what to do for supper when I noticed that my red potatoes were spying on me, (sprouting eyes.) I needed to use them asap. I also had some peppers in the produce bin of my refrigerator. Now, I’ve used that as a starter for a good veggie roast many a time but the other evening, I tweaked it up some with a secret ingredient. Here, let me show you first hand. I’ll walk you through it!
Shellie’s Sweep the Kitchen Veggie Roast
2 tablespoons butter
2-3 tablespoons extra virgin olive oil
1 onion (finely chopped)
2-3 garlic cloves (minced)
6-8 red potatoes, washed and quartered
1 can artichoke hearts, rinsed and diced
Teaspoon thyme
Salt and pepper to taste
Top with grated Parmesan or any hard cheese
We’ll begin by taking 6-8 red potatoes that I’ve washed and quartered. We’ll place ‘em in a greased casserole dish along with my chopped green pepper, red pepper, broccoli, and a can of rinsed and diced artichokes. Yes, indeed! That sweet, almost tangy flavor of canned artichokes is what ramped it up! I drizzled this with two to three tablespoons of olive oil, sprinkled ‘em with salt and pepper and thyme and stirred ‘em until they were all well coated. Then I baked ‘em uncovered at 425 degrees until the taters were tender. That took about 35 minutes in my oven.
About half way through that cooking time, I sautéed a white onion in a couple of tablespoons of butter and olive oil until the onion was clear. Then I added about three cloves of minced garlic, the more the better with the garlic at our house. I simmered that a few more minutes before stirring the onions and garlic into my other veggies and returning ‘em to the oven for the potatoes to finish cooking. If you’re a cheese lover, grate a bit of Parmesan or any other hard cheese across the top when it’s time to serve. That’s my Sweep the Kitchen Veggie Roast, y’all.
