The Queen’s Cheesy Chicken Spaghetti

In other news, my son and his family are staying with us a few days while repairs are undertaken on their house. They had a water line break upstairs, which resulted in a major indoor flood, but it’s okay. No one ever expects this type of thing or enjoys it, but all is well because all are well. Everything else can be fixed, with time. I served the Queen’s Cheesy Chicken Spaghetti for dinner tonight, along with salad, green beans, and bread. The queen would be my mom, and this would be a dish I grew up eating at her house. Honestly, I had to stop and think about the steps when I decided to post it because, after all these years, this is one of those dishes I do on autopilot!  If you’re not in a cheesy mode, you can find my Chicken Spaghetti with Italian Dressing and Black Olives on the website here.

The Queen’s Cheesy Chicken Spaghetti

1 stick butter
4-6 chicken breasts, baked and shredded (or do yourself a solid and use the meat from a rotisserie chicken you’ve picked up at the store)
1 onion, chopped and sautéed
16 ounces Vermicelli
16 ounces Velveeta cheese
Fresh mushrooms (chopped and sautéed in butter)
1 carton chicken broth
1 can Rotel tomatoes
1 small jar of pimentos
1 teaspoon minced garlic
Salt and pepper
*milk

Preheat oven to 350. Season chicken with your favorite seasonings and bake until the juices run clear. Let it cool and shred.

Meanwhile, bring a carton of chicken broth to a rolling boil and add your spaghetti. Cook until noodles are firm but can be cut with a fork against the side of your pot. Add a can of Rotel tomatoes, pimentos, a teaspoon of minced garlic, and cut in Velveeta. Cook on low, stirring occasionally until cheese melts.

Take a cast iron skillet and sauté a chopped onion in a stick of butter. Once the onions are clear, add chopped mushrooms and continue to cook until mushrooms shrink. Add onions, mushrooms, and shredded chicken to spaghetti. Season with salt and pepper. If the spaghetti is too thick, add milk to preferred consistency. Enjoy!
