A Salad Shout Out and a Promise to Return!

Hey folks! It’s an absolutely beautiful day here in northeast Louisiana, after a stormy night. I hope you’re well in your corner of the world. Between parents and grandchildren and my writing deadlines, this full-fledged member of the sandwich generation is meeting herself coming and going. But, I haven’t forgotten you! Case in point, it occurred to me that y’all might enjoy my Bodacious Broccoli Salad on your Easter table. I’m on the way to see a grand play in her first tennis tournament, but I have a lot more thoughts on this glorious season when our sweet Jesus finished everything necessary for us to live with Him now, and later! So, watch for me. I’ll be back. Which, for the record reminds me of what our Lord said when He left. Praise Him! He’s coming back!

Bodacious Broccoli Salad (Click through on the title for some silliness on my Youtube channel! And don’t forget to hit subscribe while you’re there)

Salad Ingredients:

2 heads broccoli

1 cup cheddar cheese (I use sharp)

1 cup crumbled bacon (It’s okay to use the bagged, just make sure it’s real pieces and no imitation!)

A bit of diced red onion (if you have it, I didn’t today and all is well)

1 (3 ounce) package Great Value sweetened cranberries and honey roasted almonds salad topper

Dressing:

¾ cup mayo (not Miracle Whip– don’t even get me started)

¼ cup plain Greek yogurt (you can use sour cream here, too!)

1 and ½ tablespoon maple vinegar (this is another of my secrets and it was a happy accident one day when I was out of white wine vinegar. Reverse sub if you prefer)

Salt and pepper to taste

 

Prepare broccoli and add bacon, onion, grated cheese, and salad topper fixings. Stir together dressings ingredients and pour over salad. Stir to coat well. It’s even better if you allow it time to chill in the fridge, but good luck there. It sure is hard for us. Later~
