In Times Like These

Hello friends!

Y’all are never far from my mind these days, and often in my prayers. In the words of an old commercial, it prompts me “to reach out and touch”. Whoever is saying, “What next?” needs to stop! Can I get an amen? The turmoil in our country has continued to boil, and the division seems to be growing wider by the day. Last week we saw a new level of horror when violence found it’s way to Capitol Hill.  

Like you, my gut was clenched as the scene unfolded on my television. Hours later, I wrote about my reaction. As I scan those words I realize that I can’t think of anything more I want to say about that dreadful day to you, so I’m pasting those words below in case you don’t follow me on social media…

1_6_21 I’ve condemned the violence our nation has seen this year from the left. I’ve called out those who normalized it, made excuses for it, and wouldn’t call it what it was. I refuse to follow that example. I’ve labored over these words. I’ve chosen them carefully and prayed over whether to post at all, but as I sit here, silence doesn’t feel like an option for me.

I was taught two wrongs don’t make a right and the violence in our nation’s capitol today was wrong. Period. I’ll offer no excuses and I’ll personally accept zero justifications.

Instead, I’ll repeat what I said during the summer’s rioting, looting, and burning. Those who can be identified by video should be prosecuted to the fullest extent of the law. Not catch and release, but prosecute, and punish. To my understanding, little more than a dozen people were arrested. That’s ridiculous. I’ve heard outside agitators infiltrated the rally to instigate the violence. I have no way of knowing with any degree of certainty, (and neither do you!) but squeeze the public players hard enough and they may squeal on those funding the chaos, if indeed others are.

I’m praying for evil to be exposed, justice to be served, and peace to be restored. May God have mercy on us all.

 

And now, in much lighter news…many of you celebrated with us a few months back when our son was named Farm Bureau Young Farmer and Rancher of the Year for the state of Louisiana. Would you join us again? Last Sunday we learned Phillip had made the top ten cut for The American Farm Bureau Federation’s Young Farmer and Rancher. This is the national award selected from all the state winners!  We’re so proud of him, and incredibly grateful.

This morning, (Jan. 13th), I stirred up a scratch banana pudding to take to Phillip and Carey’s house for a family viewing of the virtual conference where the winner would be announced. I put this happy pic on social just to make someone smile and got requests for the recipe. 
True to my promise, here you go, friends. 
“Shellie’s Scratch Banana Pudding”
1 and 3/4 cup sugar
5 tablespoons self-rising flour
3 cups milk
4 eggs yolks, well beaten
6-8 bananas, chopped
1 stick butter (no margarine, puuleeasse)
1 teaspoon vanilla extract
Combine sugar, flour, and milk in a microwave safe bowl. (I did this on the stove top for yearsssss, but it’s not necessary!) Cook three to four minutes at a time, stirring in between, until you get the consistency of pudding you prefer. For me, that’s about 8-9 minutes. (I think. Oh, mercy, y’all. I do this stuff on auto-pilot! Just watch your pudding and let it tell you when it’s ready. Once it looks right to you, stir in butter and vanilla extract. 
Now, spread a layer of vanilla wafers on the bottom of a pretty bowl. Top with a layer of bananas and then a layer of pudding. Repeat until you’re out of bananas and pudding. (This isn’t rocket science, y’all. Sometimes I pass on the layering and just do one layer each of wafers, bananas, and pudding and call it done! They still eat it!) Top with cool whip or homemade *meringue and finish with crushed wafers.  
*Homemade meringue isn’t hard either. I did use Cool Whip today because I literally had to– I had been on a Zoom conference call and was smack out of time. Otherwise, I would’ve gone all homemade. You can do it. Just take your four egg whites and blend them until they get frothy. Then add two tablespoons of sugar per egg white and beat until a stiff peak forms. Once you top your pudding with the meringue you’ll need to brown it slightly under the broiler to deal with those raw eggs!

In the end, the top award went to another deserving young man. Caleb Ragland of Kentucky was overcome with emotion in his acceptance speech, and that reaction was endearing to all of us. Our family sends our congratulations to his! Of course, it would’ve been wonderful had Phillip made the #1 spot, but he is totally number one in our books, and we couldn’t be more proud of him for being recognized in the top ten! 
Oh, and not to bury a headline here, but we actually got snow, yesterday! Snow, the white stuff– and it stuck! That doesn’t happen that often for us. If you’re reading these words from a snow prone area, you may be tempted to sigh. We get that, but we don’t sigh at snow in northeast Louisiana. We play in it, and we play hard! Kneeboards aren’t just for lake fun!

    weve been doing that same receipe for banana pudding forever it was nice to see others enjoy it.my mother was from ga. i live in ct im 90 and love your your thoughts. congrat to your son..gloria
