Fabulous Fried Rice

The farmer and I love fried rice but we rarely have it. For starters, we don’t have a Chinese restaurant in our small town, and until recently, I’ve never cooked it at home. But, I do love learning new things, so I set out to mimic the fried rice dishes the beloved farmer and I have always enjoyed. And if I must say so myself, (well, the farmer would witness for me if he were writing y’all), I’ve learned to knock it out of the park. Here’s my recipe…

Ingredients

Cooked rice that’s been chilled in the fridge
3-4 tablespoons butter
Veggies
1 bunch chopped green onions
1 teaspoon minced garlic
2 eggs
Toasted Sesame oil
Soy sauce
Salt and pepper to taste

Grab a really big nonstick skillet. I suppose a wok would be ever better, but I don’t own one. So, there’s that. Scramble a couple eggs in two tablespoons of butter. Fork them up well, remove them and set them aside. Add a couple tablespoons of olive oil to the same skillet and saute your veggies. Add the minced garlic once your veggies are tender.

Now, turn up the heat, baby! It’s time to move the veggies over to the side of the skillet to make room for your rice. First, add a couple more tablespoons of butter to that side. Once it melts, stir your cold cooked rice into it, turning the rice to coat it with butter. You’ll want to keep turning your rice over a medium heat. Once it starts crisping up and browning, combine it with the veggies, and sprinkle with soy sauce. How much soy sauce is up to your taste buds. It’s personal preference. I use about a teaspoon or so to this size dish.

Stir well and turn it all out into a large serving dish. Add chopped green onions and your scrambled eggs. Salt and pepper well. Now, this part is important. In my humble opinion, toasted sesame oil makes or breaks this dish. You can substitute other oils, like avacado, but none of them deliver quite the right flavor and it’s not that hard to find. I use about 2 teaspoons. Stir it in and taste to see if you need more of it, or more soy sauce, or more salt and pepper. This is your dish. Make it work for you! Add in small quantities until you’re happy!

Seriously, I could make this a meal, but it’s delicious served with your favorite protein on the side. You can also add bites of chicken, shrimp, etc. to the finished dish! Enjoy!
